Dirty Fried Rice



Executive Chef John Besh of the Besh Restaurant Group in New Orleans, sometimes adds cooked shrimp and/or chicken to his version of fried rice.



Makes 6 servings.

Ingredients

1 package ZATARAIN'S® Dirty Rice Mix, Original
2 tablespoons sesame oil, divided
2 eggs, beaten
1/2 cup diced ham
1 green onion, chopped
1 clove garlic, finely chopped
1 tablespoon minced fresh ginger
1/2 cup frozen peas, thawed
1 tablespoon chopped fresh cilantro
1 tablespoon hoisin sauce

Directions

1. Prepare Dirty Rice Mix as directed on package, omitting ground beef.

2. Meanwhile, heat 1 tablespoon of the sesame oil in large skillet on medium-high heat. Add eggs; scramble until set. Remove from skillet. Set aside.

3. Heat remaining 1 tablespoon sesame oil in skillet. Add ham, green onion, garlic and ginger; cook and stir 1 minute or until fragrant. Add peas and cilantro; cook and stir until heated through. Add cooked dirty rice, hoisin sauce and scrambled eggs. Cook and stir on medium-low 1 minute or until well blended.
